一、What scenarios call for meat slitting



China's meat industry chain is divided into upstream, midstream and downstream, with upstream mainly breeding plants, midstream mainly slaughtering and processing plants, and downstream mainly wholesale plants, retail and food processing plants. Among them, those who need to cut and slice meat are mainly slaughtering and processing plants, retail and food processing plants.


1. Slaughterhouses

In the slaughtering and processing plant, the meat is generally processed differently according to the needs of different customers. 3. Food processing plants

In food processing plants, depending on the processing requirements of different products, meat is usually subdivided into meat pieces of a certain weight or thickness for subsequent processing, such as beef jerky, chicken breast and other snacks.




二、Methods of slitting meat


At present, the methods of meat slitting and processing are mainly divided into two categories - manual splitting and machine cutting.


1. Manual segmentation:Professional splitters are hired for manual splitting and cutting, and experienced splitters can break down a whole pig weighing up to one hundred pounds in six minutes.

2. Machine Dicing:There are quite a few types of meat cutters on the market today, such as frozen meat cutter, meat slicer, bone cutter, skinning machine and so on.

In response to the project "Intelligent Meat Processing", a university's College of Agriculture, in order to study the intelligent meat processing technology, wants to develop an intelligent cutting machine, which needs to analyze the morphology of the meat to be cut, and the morphology information is transmitted to the cutting machine with the cutting tool to carry out accurate cutting, so as to realize the intelligent processing of the meat.
